Tradycja picia młodego wina od 11 listopada do Świąt Bożego Narodzenia liczy wiele stuleci. Związaną jest z postacią św. Marcina, patrona winiarzy, przedstawianego w ikonografii jako rycerza na koniu, oddającego płaszcz żebrakowi. Jego atrybutami są m.in. dzban (wina) i gęś. Świętomarcińskie wino zwykle serwuje się z pieczoną gęsią, symbolem urodzaju i dostatku.
Zwyczaj ten wiąże się ściśle z postacią św. Marcina, którego wspomnienie obchodzimy 11 listopada. Św. Marcin był rzymskim legionistą, żył w IV wieku n.e., po swoim nawróceniu został pustelnikiem, a ostatecznie biskupem Tours. W tym samym czasie, na terenach dzisiejszej Francji zaczęto zakładać pierwsze winnice, a ich właściciele oddawali cześć św. Marcinowi, który stał się patronem winiarzy. Pierwsze tradycje degustacji młodego wina w dniu św. Marcina, to jest 11 listopada, rozprzestrzeniły się w Niemczech, a potem objęły resztę Europy. W tym samym czasie chłopi składali daninę, której istotnym elementem były gęsi – właśnie wtedy najtłustsze i najsmaczniejsze. Do klasycznej świętomarcińskiej pieczonej gęsi, serwowanej tradycyjnie w ten wieczór na kolację, podaję się tegoroczne, młode wina. Ten lokalny, ludowy zwyczaj kultywowany jest obecnie przez producentów win w Austrii, Czechach, Słowacji i na Węgrzech. Producenci butelkują specjalne partie młodego „świętomarcińskiego wina”, które jest swoistą odpowiedzią tych regionów na francuskie beaujolais nouveau i włoskie novello.
